These fields supply default values for who form submission emails appear to come from. You should leave them Dynamic unless you have specific reasons not to (ie., you are not asking for visitor's email address). This allows you to include text boxes in each of form that a visitor can use to supply their email address ('email') and real name ('realname'). If you set these fields to Fixed, the form submission emails will always appear to come from the address and name you define here.
